Hi Fabienne, I would definitely recommend pre-cooking in water, as this makes the bagels fluffier and softer. Optionally, you could brush them with a little water in the oven, but I haven’t tried this yet.

Try the Receipt without the Water, otherwise the dough becomes extremely sticky. You may need a few drops of water to bring the dough together perfectly! I also formed a long roll, cut it into 8 pieces and made balls out of it. You can then make a hole in each ball using your finger or a cooking utensil.
